Let’s hope that baking will put an end to the frustration!!
Preheat the oven to 350°F.
Line 2 baking sheets with parchment paper and set aside.
Using a hand mixer, whisk the butter and both sugars together until they're light and fluffy - about 3 minutes.
Add the eggs, one at a time, whisking until well-blended. Stir in the vanilla.
Gently fold in the sifted flour, baking soda, baking powder and salt.
...so simple and straightforward...
Mix in the oats, chocolate chips, walnuts, raisins, and coconut, by hand (because fun) or you can use a spatula.
It's both messy AND satisfyingly squishy. Perfect!
Take a small handful of the dough. Gently roll and flatten each handful and place it on the baking sheet, about 2 inches apart.
Bake for 10-12 minutes or until the cookies are browned at the edges.
Cool the cookies on a cooling rack.
