When it’s not just the weather, the gloomy feeling is the mood. It’s dark, cloudy and a little sad but, it’s also quiet, reflective, and surprisingly peaceful. The emotions, they’re fitting as they play out in the weather. There’s a strong pull to stop just to soak in the rain and the mood...
And if the mood’s a little gloomy and you’re on the verge of a downpour, take comfort in knowing that you can bring a little light to the rain. Put on the comfy pyjamas, grab a cup of hot tea, and sit back. If the mood can be reflected in the weather, then eventually the weather (and the mood) will change. Make your way through this gloomy mood (and bake)!

A combination... that’s sweet, tart, and honeyed with an irresistible mix of flavours and textures. It’s a dessert that’s bright and cheery, and easy to make. It’s understated and effortless.

Prep time: 5-10 minutes, Bake time: 10 minutes
Makes 4 servings
Ingredients
  • 4 thick slices of pound cake, cut into 4 strips each
  • Drizzle of honey (optional)
  • 12 Raspberries
  • 20 peach slices from a can
  • 8 Strawberries, cut into pieces
Glaze:
  • 2 tbsp icing sugar
  • 2 tsp lemon juice
Instructions
Let’s add a little something to the mood...
Preheat the oven to 350˚F.
Line a baking sheet with parchment paper. Set aside.
Cut the pound cake into slices, then cut each slice into 4 strips.
Well, that’s a strong start!
Drizzle honey onto each strip of cake and bake until browned at the edges, approx. 10 minutes. Remove from the oven and set aside.
That’s definitely “a little something” right there!
In a small bowl, mix the icing sugar and lemon juice together. Set aside.
In each serving bowl, layer the raspberries, peaches, and strawberries. Places 4 strips of the toasted pound cake on top.
It’s almost too delicious!
Drizzle the icing sugar mixture on top of each bowl. Enjoy!
This dessert is easy to sit with and savor. It’s a lovely way to enjoy the mood.
