I’m so irritated that it’s slowly turning into anger –that’s no good. I *might* be a bit hangry too. Maybe I’ll make a quick snack before it gets any worse. I think I’ll bake.

something that's straightforward and hard to mess up,
something that’s distracting and fun,
something that uses ingredients already in my pantry (plus chocolate),
something that's salty and sweet with a nice crunch...

These “cookies” are super quick to make and they’re satisfying for any taste whether you’re feeling sweet or salty or both.

Prep time: 10 minutes, Cool time: 30 minutes
Makes 20 “cookies”
Ingredients
  • 1 cup (172 g) dark chocolate chips
  • 1 tbsp vegetable shortening
  • 20 Ritz crackers
  • Peanut butter chips or Toffee chips
Instructions
I’m in, let’s do this...
Round up the Ritz crackers and any toppings you may want to use. Set aside.
In a medium bowl, melt the chocolate chips and shortening together in the microwave, starting with 30 seconds at a time. Continue until the chocolate is just melted. Stir well.
Easy. Good!
Dip the crackers into the chocolate mixture making sure they’re well coated on all sides. Use a fork to lift the crackers out of the chocolate so the excess chocolate can drip off the crackers easily.
Snack while you work? Start with crackers? Yes. Then the toffee chips? Definitely! Followed by the chocolate? Hell yes!
Place the cookies on a lined cookie sheet then sprinkle on the peanut butter chips or toffee chips and cool in the fridge for 20-30 minutes.
You can wait for the Ritz cracker cookies to set in the fridge or you can full-on eat them before they’re set and enjoy the messiness of it. I think that’s an easy decision – mess please!

These cookie crackers suit almost any situation they’re put in – sweet/salty, crowd/single, leisure/short on time. And with them, the irritation is gone!
