I hate being misunderstood. It’s frustrating when nothing can be done about it either. Making peace with it is (sometimes) as good as it gets and that *sucks*. Until I get there, I think I'll bake.

This bread has an understated floral scent and taste that’s unconventional and a little bit complicated (not to make but to be)...I know the feeling... This bread, it gets me.

Prep time: 20 minutes, Rest time: 1 hour and 20 minutes, Bake time: 30 minutes
Makes 1 loaf
Ingredients
  • ¾ tbsp active dry yeast
  • 1½ cups warm water
  • ¼ cup honey, warmed
  • 2 tbsp rose water
  • 3¼ cups + 2 tbsp (533 g) all purpose flour
  • ½ tbsp coarse sea salt
Instructions

Pour the warm water and honey into a large bowl. Stir in the yeast and rose water.
Slowly mix in the flour and salt and knead together until it becomes a rough mound. You can do this by hand or use a stand mixer.
Ah, kneading (the dough) is a great stress-reliever, especially when it’s stress you didn’t know you had.
Continue to knead the dough for 5 minutes, on a floured surface, adding more flour as needed, until it appears smooth and well incorporated.
Place the dough in a lightly greased bowl and cover with plastic wrap and a towel. Let it rise in a warm place for 40 minutes.
The process isn’t complicated, thankfully.
Put parchment paper inside a loaf pan. Set aside.
Press the dough into the prepared loaf pan.
Allow the bread dough to rise in the pan, uncovered, in a warm place for 40 minutes.
I think I’ll dream up what to put on this bread once it’s done...maybe butter? Jam?
Preheat the oven to 400°F.
Drop the oven temperature to 375°F then bake the bread for 30 minutes on the lowest rack in the oven.
Let the bread cool in the loaf pan for 15 minutes before moving it to a cooling rack. Wait to slice into it until it reaches room temperature.
This bread is unconventional, but it tastes beautiful...hmmm, fancy that!?
