I’m optimistic - it’s hopeful, positive, and happy. It feels like I can handle anything (even when things get tough). It’s a sweet place to be, so while I’m here I think I’ll bake.

Serves 6
Ingredients
  • 15-20 fresh strawberries, sliced into halves
  • Honey, to drizzle (about 3 tbsp)
  • Whipped cream (premade or follow recipe below using:)
  • 500 ml whipping cream
  • 2 tbsp sugar
  • 2 tsp vanilla
Instructions
Let’s make something to enjoy...
Make the whipped cream (omit if using the premade variety): In a small bowl, whip the heavy cream with the sugar and vanilla until soft peaks form, 2-3 minutes. Distribute evenly into 6 dessert bowls.
Top the whipped cream with the strawberries, then drizzle on the honey (about ½ tbsp per bowl).
Enjoy.
It’s light and fresh and exactly the thing to accompany this optimism. Beautiful.
