overwhelmed strawberry peach trifle.
I’m awfully busy today and already I’m feeling overwhelmed. You know the kind; the day has just begun, the to-do list is jam-packed, the mountain looks insurmountable...but I have some pockets of free time throughout the day to do something fun. I think I’ll bake.

something I can make piecemeal between other tasks,
something that doesn’t require a lot of concentration,
something with fruit and cream and a mild rum-spiced kick...

This trifle is smooth with a perfect combination of flavours that demand you eat the entire thing directly out of the serving bowl.

Prep time: 30 minutes, *Chill time: 2 hours (*not required)
Serves: 6
Ingredients
  • 300 g lady fingers, crumbled
  • 1 tbsp spiced rum
  • 398 ml/14 fl oz can of peach slices, drained and chopped
  • 340 g fresh strawberries, chopped
  • 800 g vanilla pudding
  • 2 tbsp slivered almonds
  • Whipped cream (premade or follow recipe below):
  • 500 ml heavy cream
  • 2 tbsp granulated sugar
  • 1 tbsp vanilla extract
Instructions
PART 1: Chop the peaches and strawberries, evenly. Set aside.
Work on a thing.
PART 2: Make the whipped cream (omit if using the premade variety): In a separate bowl, whip the heavy cream with the sugar and vanilla until stiff peaks form. Set aside in the fridge.
Complete the thing.
PART 3: Assemble: Start with a generous layer of crumbled lady fingers along the bottom of a medium serving dish (about the size of 3 L). Lightly sprinkle a few drops of rum on top. Next, add a liberal layer of peaches and strawberries topped with a thick layer of vanilla pudding. Repeat all the layers until the dish is nearly full.
Work on another thing.
PART 4: Spread a thick layer of whipped cream and scatter slivered almonds on top to finish.
Eat the trifle in one sitting. With a big spoon. It’s a reward for a day well spent.
