The fact that it’s working out the way you’d hoped is not lost on you. There’s a calm, contented, at ease feeling that spreads from your fingers to your toes. There’s nothing left to do but savor this relief (and bake).

Prep time: 20 minutes, Rest time: 1 hour and 20 minutes, Bake time: 30 minutes
Makes 16 buns
Ingredients
  • 1 ½ tbsp active dry yeast
  • 3 cups milk, warmed
  • ½ cup honey, warmed
  • 6 ¾ cup (1 kg or 1066 g) all purpose flour
  • 1 tbsp coarse sea salt
Instructions

Slowly mix in the flour and salt and knead together until it becomes a rough mound. You can do this by hand or use a stand mixer.
Continue to knead the dough for 5 minutes, on a floured surface, adding more flour as needed until it appears smooth and well incorporated.

Place the dough in a lightly greased bowl and cover with plastic wrap and a towel. Allow to rise in a warm place for 40 minutes.
There’s a sweet scent filling the air.
Put parchment paper inside 2 loaf pans. Set aside.
Separate the dough into 16 equal-sized balls and place 8 balls into each of the prepared pans.
It’s a fun step!
Allow the buns to rise, uncovered, in a warm place for 40 minutes.
Brush the buns with milk.
They look irresistible!
Preheat the oven to 375°F then bake the loaves for 30 minutes on the lowest rack in the oven.
Freshly baked bread - is there anything better?
Let the buns cool in the loaf pan for 15 minutes before moving it to a cooling rack. Wait to slice the bread until it reaches room temperature.
With relief (and a sweet scent) in the air, it’s easy to enjoy the moment. Spread some salted butter on the warm bread and dig in. Add a cup of tea and a friend to share it with and you’ve got the mood in a nutshell!
