restless caramelized apple pancakes
Restless and stuck in an anxious, agitated, fidgety loop. It feels endless and uncomfortable with no place to settle. There’s an edge to the mood that’s adding tension to the air. Figuring out what to do is second only to determining if it’s worry-induced or a result of boredom as each may require something different.
Whatever the reason, if there’s nowhere to settle may as well keep moving - lingering does not benefit. Find something that will help or distract, whichever fits the mood, and almost always, bake.

Pancakes...
that are caramelized yet tangy-sweet (say what?!),
that are fluffy, warm, and tempting,
that are satisfying and filling,
with a fun little flourish to make it interesting,
that are deliciously distracting to make and eat and provide a helpful step away from the mood...

These pancakes are lovely and deep and so full of flavour. They’re easy to linger over and slow down with each delicious bite.
caramelized apple pancakes
Prep time: 15 minutes, Cook time: 15 minutes
Makes 8-10 mini pancakes
Ingredients
- 1 cup (148 g) all purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 ½ tbsp brown sugar
- ½ tbsp cardamom powder
- 2 tbsp (28 g) salted butter, melted
- 1 cup milk
- 1 large egg
- 3 ½ tbsp water
- 4 apples, sliced into thin wedges
- 2 tbsp brown sugar
Instructions
Distraction commence...
Slice the apples into thin wedges. Set aside.
Sift the dry ingredients into a medium bowl.
Add the wet ingredients to the dry ingredients and gently mix together until combined.
So far, the distraction is working!
Dip the apples into the 2 tbsp of brown sugar. Lightly spread the sugar evenly on one side of each apple slice.
Easy and fun!
Heat a non-stick skillet over medium low heat. Add oil to the pan.
Arrange 4-6 apple slices in little groupings in the pan. Cook with the brown sugar side down. Carefully pour ¼ cup of pancake batter to cover the apples and cook for 2-3 minutes. Flip the pancakes and cook until lightly browned, another 2-3 minutes.
This delightful distraction is perfect for three reasons - it’s a great reminder to get moving when standing still is not it, it’s an awesome way to shift gears, and last but not least, it results in a deliciously warm and fluffy, flavourful treat.
