I'm antsy - it’s a deeply fidgety, “on edge” feeling and I can’t sit still any longer. I have to do something about it. I think I'll bake.

something that’s equal parts intriguing and remedying,
something that appears simple but upon further inspection is anything but,
something that’s sweet with a peppery kick...

These muffins have a pleasantly mellow base with a sharp beat at the end that warrants a little lingering over.

Prep time: 20 minutes, Bake time: 25-30 minutes
Makes 12 muffins
Ingredients
  • 2 cups (304 g) all purpose flour
  • ¼ tsp salt
  • ½ tsp baking soda
  • 2 tsp baking powder
  • 2 tsp of black pepper
  • ¾ cup (160 g) sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • ¼ cup honey
  • 3 tsp vanilla
  • ½ cup milk
Instructions
I’m beyond ready to get started!
Preheat the oven to 350°F.
Sift the flour, salt, baking soda, baking powder and black pepper into a medium bowl and set aside.
...well, that’s an interesting mix.
In a separate bowl, using an electric mixer beat the oil and sugar together for about a minute. Add the eggs, one at a time, beating at high speed for each, until the mixture is very light.
Stir in the honey, vanilla and milk.
The honey and vanilla are really nice together - it’ll be interesting to see how they work with the black pepper.
Fold the dry ingredients into the egg mixture.
Pour the batter evenly into each liner, filling them all the way to the top. Bake the muffins for 25-30 minutes. It’s ready when a skewer inserted into the middle comes out clean.
Sitting down to these sweet and slightly peppery muffins, the antsy-ness calmed down, relief and sweetness fill the air.
