Let’s bake a little happiness into these cookies...
Preheat the oven to 325˚F.
Line a baking sheet with parchment paper. Set aside.
In a medium bowl, melt the chocolate chips, butter, and vegetable shortening together in the microwave, starting with 10 seconds at a time. Continue to heat in small bursts until the mixture is almost completely melted. Stir. Then, using an electric mixer, whisk the mixture until fully incorporated, about 30 seconds.
Pour the egg yolks, maple syrup, sugars and vanilla into the chocolate mixture and whisk until they’re well mixed.
Well, that looks soooo good already!
Sift the cocoa powder, flour, baking soda, and salt into the chocolate mixture. Fold it in until there are no streaks.
Irresistible!
Take the dough by the tablespoon and roll it into balls. Flatten them slightly before placing them to the baking sheet, 2 inches apart.
I can’t wait!!
Bake for 12-15 minutes.
The smells wafting from these cookies as they bake are pure joy!
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
