something that’s tart, maple-y, smooth...

These cookies are all kinds of right. The flavours work so well together – it almost seems like a disservice *not* to put them together (think: tart lemon flavoured cookies with the perfect crunch and a sweet layer of smooth maple cream sandwiched between). Now that’s sassy!

Makes 16 cookies
Ingredients
  • ¼ cup (47 g) vegetable shortening
  • ¼ cup (57 g) unsalted butter, room temperature
  • ½ cup + 2 tbsp (125 g) granulated sugar
  • 1 large egg, room temperature
  • 2 tbsp maple syrup
  • 1 ½ tsp lemon extract
  • 1 ½ cups (225 g) all-purpose flour
  • ¼ tsp baking powder, heaped
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 oz cream cheese, softened
  • 1 ½ tbsp powdered sugar
  • ½ tsp maple extract
  • ¼ cup heavy cream
Instructions
Let’s get this sassy plane in the air!
In a large bowl, using a hand mixer, cream the shortening and butter until creamy, about 30 seconds. Add the sugar and whisk until light and fluffy, about 1 minute.
Whisk in the egg until fully incorporated. Add the maple syrup and lemon extract and whisk until well mixed. Set aside.
Oh, God! That smell – what did I do to deserve this magic in my kitchen?
In a medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Fold it into the butter mixture until it comes together into a soft dough. Cover and refrigerate for 15 minutes.
Exciting!!
Roll out the dough to 1/8-in. thickness. Cut shapes into the rolled-out dough using a cookie cutter.
And…concentrating!!
Place the cookies on a parchment-lined baking sheet, 2 inches apart.
Bake at 350° for 12-15 minutes or until golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring to a cooling rack.
Those sweet smells are calling to me...sdelicious!
In a medium bowl, using a hand mixer, whisk the cream cheese on medium speed until smooth. Add in the powdered sugar and maple extract. Mix until well incorporated.
Add the cream and continue to whisk until stiff peaks form.
Do this next part only when you’re ready to eat them, otherwise the cookies will become soft from the maple cream (but will still taste delicious!)
Lightly spread the maple cream mixture between two cooled lemon cookies. Then put the two cookies together with the cream in between to make a sandwich.
Refrigerate (but know that these cookies will become soft if the cream is added and left on for more than a few hours).
Well, the *sassy* mood is here to stay and with the help of these cookies, it’s going strong. Just the way I like it!
*Just so you know, these cookies aren’t sassy – you are! You bring the sass, and the cookies bring the flavour.
